Chai tai is a traditional specialty in china. One of the world's three most distilled wines known as scotch, cognac in france, and one of china's three most famous wines. It's also the father of the cosmopolitan wine, over 800 years old. The style quality of guizhou's platinum wine is characterized by "saffliction of sauce, elegance, alcohol thickness, fragrance of retorts, fragrance of empty cups" and its particular style is derived from the unique traditional brewing techniques that have grown over the years, combined with their agricultural production in the river basin, influenced by the environment, seasonal production, noon-steppings, heavy-heavy materials and the preservation of some of the original local life signs. In 1996, the chai tai wine process was established as a state secret to protect it. In 2001, the sutai traditional process was included in the first material cultural heritage at the national level. In 2006, the state council approved the inclusion of the "sippai traditional brewing process" in the first national list of intangible cultural heritage and declared the world's intangible cultural heritage. On 29 march 2001, chai tai was approved as a "area of origin protected product" [1-2][49]. On 28 march 2013, the former general directorate of state quality inspection approved a change in the name and scope of protection of the product of the geographical sign of the "sau thai"。
