The aim is to provide a reference for the preparation of high-stable water-covered subsembled seed emulsions, using subsample oil as oil, the effects of various mass fractions of oil and three different emulsifiers (60 tween 60), egg phosphorus (pc) and soybeans separated proteins (spi)), the application of a high-pressure mean method to produce three doses of water-packed subsamate emulsifiable emulsions under 60 mpa pressure, the effects of the type of emulsifier and the oil phase mass fractions on the physical stability of emulsifiable fluids by measuring the appearance, microstructure, particle size, zeta electric position, peroxide value (pov), thiobarte acid value (tbars), changes in the size of the oxidation product, changes in the composition of the main fatty acids, and the effects of the milk-quality fractions on the stability of emulator at 37°c. The results show that, with the increase in the mass fraction of the oil phase, the size of the emulsor emulsifiable lotion is tween 60 < . Pc emulsion <spi emulsion with physical stability of tween 60 > pc emulsion > spi emulsion; pov level of seed oil emulsion is tween 60 emulsion after 37 °c storage for a certain period of time pc emulsion > spi emulsion with tbars level of tween 60 < pc emulsion <spi emulsion; 1h nmr spectra shows that tween 60 emulsions from the main oxidation of the central asian leachate are obituary oxidation diethylene peroxides and secondary oxidation products of formaldehyde, with pc emulsion oxidation products mainly in reverse and anti-cosm dihydroxyperoxide and formaldehyde secondary oxides, with no significant hydroperoxides and formaldehyde oxides in spi emulsions, were observed, but fingerprint peaks of secondary oxides, such as platinum, ketone, and alcohol, were observed, presumably with pyrooxidates of unsaturated fatty acid; gas chromatography results show significant losses of central asian and sub-oilic acids in different emulsifiers, with total losses of unsaturated and fat acids being pc lotion > spi emulsions >tween 60 emulsions, of which pc emulsions are not saturated with high fatty acid losses, presumably due to co-oxidation. Pc and spi have inhibited primary oxidation of sub-smelting oils in water-charted emulsions, but co-oxidation has resulted in higher sub-oxidation levels of sub-smelting oils。
