In 2026, the food industry entered the production capacity contraction, consumption upgrading, price up-cycle, driven by plant reductions, food recovery, demand for high-end mushrooms, with wholesale prices increasing by 15-30 per cent over the same period for several items, and some rare varieties of fresh products exceeding $100 per kilogram. This paper focuses on five high-priced and stable mushrooms, with clarity about varieties, suitable areas, core management and taboos, to help farmers catch up and achieve efficiency gains。
I. Ashellella (high end scarcity, fresh products 110-160 yuan/kg, dry products 800-1500 yuan/kg)
Core producing areas: high altitude or cold areas such as yunnan, sichuan, hubei, henan, fujian。
Cultivated in october-december, mushrooms in february-april, 60-80 days。
Management highlights:
Soils are swirling, ph 6. 5-7. 5, anti-heavy accumulation。
Herbicide temperature is 15-20°c, mushrooms 8-15°c are produced, and night and day temperature differentials stimulate mushrooms。
Air humidity ranges from 85 to 90 per cent, with light spray fog and no heavy water。
Full-scale exposure to light, with over 90 per cent shade in the shed。

Note:
Bacteria must be regularized, ageing and fungi。
Interconnection is forbidden, re-emergenceable fields is reduced by 50%+。
High temperature protection during mushrooming, over 20°c prone to malformation and premature decay。
Ii. Deer mushrooms (emerging explosion at an average cost of $15. 43/kg, +16. 1%, ring +18. 9%)
Core production areas: fujian, zhejiang, jiangsu, shandong factory chemical/boom main production area。
Cultivation time: four seasons are available, large huts dominate spring and autumn, and factories produce steady production throughout the year。
Management highlights:
Cultivation is based mainly on wood crumbs, corn cores and molybdenum, which are completely sterile。
Bacillus 22-25°c, mushrooms 18-22°c, humidity 90-95%。
Weak dispersing light, adequate ventilation and too high a carbon dioxide umbrella。
One harvest followed by a rehydration, two to three。
Note:
Inoculation and sterilization are key to protection against fungus contamination。
And the wetness is low and yellow, and it is weak。

Iii. Twin mushrooms (high-end mass, 16. 5 yuan/kg wholesale, corresponding to +16. 4%)
Core-producing areas: henan, shandong, anhui, sichuan, suitable for silt-rich areas。
Cultivation time: the cold season is the best in september-may。
Management highlights:
The fermentation is dominated by straw, cow dung and chicken dung that are fully decomposed。
Bacillus 22-24°c, mushrooms 14-18°c, low temperature, high quality。
Dust soil is the core, coarse soil + fine earth layered to keep it wet。
Humidity 85-90%, ventilated flat and unbridled mushrooms。
Note:
Temperatures above 28°c, no harvest。
It is forbidden to contain ammonia undecompured manure, death-prone mushrooms。
Iv. Shrooms (traditional stable prices, higher prices for high-quality mushrooms, $12/kg wholesale)
Core areas: henan west isthmus, liaoning rock, zhejiang, fujian, hubei。
Cultivation time: autumn planting, august-october, mushrooms in winter and high returns from anti-season summer mushrooms。
Management highlights:
The best wood, the best wood crumbs, and the best rods are in place。
Bacillus 22-26 °c, decorative, dry and wet mushrooms。
The mushrooms, 10-20°c, require low humidity, ventilation and light。
Water recharge is moderate, rot rods, green molds。
Note:
It's not a good color. It's forbidden to shoot。
Anti-temperature high-wet blast rods, fungus outbreaks。

V. Gymphrooms/crab mushrooms/white mushrooms (the factory price increased at an average price of $9. 39/kg, compared to +16. 3%)
Core production areas: shandong, hebei, jiangsu, fujian factory chemical park。
Cultivation time: facility sheds grow four seasons。
Management highlights:
Cultivated wood crumbs, cotton hulls and aluminum cortex。
20-24 °c, followed by 45-60 days and 12-16 °c mushrooms。
High humidity 90-95%, weak light, even ventilation。
Note:
The latter are not productive enough and must go through the cycle。
Temperature fluctuations are easy to open and quality downgrade。
Vi. General gold code for mushroom cultivation, 2026
1. Selection of pairs: newcomers start with mushrooms and double mushrooms; facilities are in place to make deer mushrooms and fungus mushrooms; and cold resources are in place to make sheep belly。
2. Quality of production areas: heavy rainfall in the south, heavy drainage and rain cover; re-heating and wetting in the north; rare mushrooms in the mountains and mass mushrooms in the plains。
3. First of all, the fungus is the number one killer, who is well prepared, inoculated and incubated。
4. Temperature and humidity: rather than a little lower, do not rise or fall; constant temperature + steady humidity + slow ventilation = high yield and high quality。
5. Not blindly expanding production: test seeding in small sheds, successful expansion, avoiding double losses from swings + technical errors。
6. Erection: avoiding concentration, counter-season, early and late, with high prices of 30 to 100 per cent。
The year 2026 was a high-risk year for mushrooms, with a strong price and a high demand for sheep’s belly, deer’s mushrooms, double mushrooms, mushrooms and real fungus. By selecting suitable varieties, strictly controlling warm and wet fungs, and selling them at wrong prices, ordinary farmers can capture the dividends and generate tens of thousands of additional acres and a steady annual increase。
